How old do you think the marshmallow is? Would you believe before Columbus, or the Vikings discovered America? How about before the birth of Christ? Maybe 4000 years? That's right: 4000 years old!

Marshmallows date back to ancient Egypt. Some historians claim these culinary delights got their name when Egyptians discovered they could produce a sweet sticky substance by squeezing the mallow plant (Athaea officinalis), which grows wild in marshes. They flavored the extract with honey. The delicacy was so special, it was reserved for gods and royalty only.

Fast-forward to France in the mid-1800s, when marshmallows miraculously reappeared. Owners of small candy stores made them by sweetening, whipping, and molding the sap from the mallow root. Doctors extracted juice from the plant's roots. It was then cooked with sugar and whipped with egg whites. When this foamy meringue hardened, it created a medicinal candy that was used to soothe children's sore throats, suppress coughs, and even help to heal minor cuts, scrapes, and burns.

Folks liked the marshmallow's unique texture and taste so much that candy makers couldn't keep up with the high demand. Today Americans, who have taken to the confection more than any other nation, purchase more than 90 million pounds annually.
